Oat Cake With Coconut Topping (lowfat) Recipe

Ingredients
  • 3 tbsps walnuts, finely sliced .
  • 2 tbsps margarine, softened .
  • 1/4 c evaporated skim milk .
  • 1 tbsp margarine .
  • 1 tsp baking powder .
  • 1/4 c shredded coconut, sweetened .
  • 3/4 c all-purpose flour .
  • 2 tsps all-purpose flour .
  • 1/2 c sugar .
  • nonstick cooking spray .
  • 1/2 tsp ground cinnamon .
  • 1/3 c dark brown sugar, firmly packed .
  • 1/4 c oatmeal .
  • 1/3 c unsweetened applesauce .
  • 1/4 c oatmeal .
  • 1/3 c low-fat milk (1 %) .
  • 1 egg .
  • 1 tsp vanilla extract .
  • 1/4 tsp salt

Directions
  • Step #1 Coat an 8-inch round or square cake pan with cooking spray; dust with 2 tsps flour, & set aside.
  • Step #2 Preheat oven to 350-degrees.
  • Step #3 Bring milk to a simmer in a small saucepan.
  • Step #4 Stir in 1/4 c oatmeal.
  • Step #5 Bring to a boil, & remove this from heat.
  • Step #6 Spoon mixture into a small bowl; let cool.
  • Step #7 Combine 3/4 c flour, cinnamon, baking powder, & salt in a small bowl; set aside.
  • Step #8 Combine 1/2 c granulated sugar & 2 tbsps margarine In a large-ish bowl; beat at medium speed of a mixer until mixed.
  • Step #9 Add applesuace, vanilla, & egg; beat until mixed.
  • Step #10 Add flour mixture & oatmeal mixture; beat until well mixed.
  • Step #11 Pour batter into prepared pan.
  • Step #12 Bake 25 mins or until wooden pick inserted into center comes out clean.
  • Step #13 Remove from oven; set aside on a wire rack.
  • Step #14 Combine the brown sugar, & 1 tbsp margarine in a small saucepan; bring to a boil over med-heat/flame, evaporated milk, & cook 30 seconds.
  • Step #15 Stir in 1/4 c oatmeal, walnuts, & coconut; cook 30 seconds.
  • Step #16 Spread over cake; broil 2 mins or until lightly browned.
  • Step #17 Let cool on wire rack.
