Sugar Snap Peas And Onions Recipe

Ingredients
  • 1 (6 oz) package frozen sugar snap peas .
  • 1/2 tsp dried tarragon, sliced or 1 1/2 tsps fresh tarragon leaves, sliced .
  • 2 tbsps butter .
  • salt & pepper .
  • 1 large onion, cut into thin wedges .
  • 1/4 c chicken broth

Directions
  • Step #1 Melt butter in a medium saucepan & add onion.
  • Step #2 Cook over med-heat/flame, stirring every once in awhile, until onion is softened but not transparent (about 2-3 mins).
  • Step #3 Add remaining ingredients (EXCEPT PEA PODS) & bring mixture to a boil.
  • Step #4 Reduce heat to a medium heat & add Pea pods.
  • Step #5 Cook until vegetables are tender (about 1-2 mins) & heated through or to desired crispness.
  • Step #6 NOTE: If you remove pea pods from freezer before you get started & let them sit on counter in package, they will defrost just a little & cooking time may shorten slightly.
