Tomatoes Canned Recipe

Ingredients
  • 2 oz white vinegar, aside for mixing dry ingredients .
  • 2 lbs vidalia onions (sliced) .
  • 4 tbsps salt .
  • 1 tbsp dry mustard .
  • 1 tbsp curry .
  • 2 tbsps cornstarch or flour .
  • 26 oz white vinegar .
  • 8 lbs tomatoes (red ripe or green) .
  • 2 lbs sugar

Directions
  • Step #1 Cut tomatoes & slice onions put in a very large pot.
  • Step #2 Sprinkle top with salt.
  • Step #3 Let stand overnight.
  • Step #4 Drain liquid off.
  • Step #5 Cover up with vinegar & bring to a boil.
  • Step #6 When tomatoes are boiling add sugar.
  • Step #7 Boil for 30 mins.
  • Step #8 Add mixture of mustard, curry with 1 oz of vinegar.
  • Step #9 Boil for 20 mins longer.
  • Step #10 Mix flour or cornstarch with 1 oz of vinegar.
  • Step #11 Add to boiling tomatoes boil another 10 mins.
  • Step #12 Put in sterilized jars with clean dry sealers Note: boiling time depends on how thick you want the tomatoes for the final product.
