Cinnamon Apricot Swirls Recipe

Ingredients
  • 1 tsp shortening .
  • 4 tsps cinnamon .
  • 1/4 c toasted sliced almonds (optional) .
  • 1 c butter, slightly softened .
  • 17 1/3 oz puff pastry sheets (1 box) .
  • 1/2 c dried apricots .
  • 1/2 c white chocolate chips .
  • 1 c brown sugar

Directions
  • Step #1 Defrost puff pastry according to package directions.
  • Step #2 Preheat oven to 400º.
  • Step #3 Place apricots in a bowl & pour enough boiling water over to cover.
  • Step #4 Let sit for 10 mins; drain well & chop into very small pieces.
  • Step #5 In another bowl mix butter, brown sugar & cinnamon.
  • Step #6 On lightly floured surface, roll out one sheet of puff pastry to seal creases.
  • Step #7 Spread half of the butter mixture over pastry almost to the edges.
  • Step #8 Sprinkle top half of the sliced apricots on top.
  • Step #9 From one edge, tightly roll up the pastry into a long log.
  • Step #10 Seal the edge using a little water.
  • Step #11 Slice the log into 8 spirals & place cut side up on foil wrap or parchment-lined baking sheet.
  • Step #12 Chill in refrigerator for about 15 mins to firm up the butter.
  • Step #13 Repeat with remaining ingredients (except white chocolate & shortening).
  • Step #14 Bake at 400º for 15-20 mins until golden brown.
  • Step #15 Place white chocolate chips & shortening in small zip-lock baggie.
  • Step #16 Microwave on HIGH for 30 seconds.
  • Step #17 Knead bag to mix.
  • Step #18 Cut a small slit in corner of bag & drizzle white chocolate over the swirls.
  • Step #19 Sprinkle top with toasted almond slices, if desired.
