Soft Pretzels Recipe

Ingredients
  • 6 1/2 c all-purpose flour .
  • 1 egg yolk .
  • coarse salt .
  • 1/2 c sugar .
  • 1/4 c butter or margarine, softened .
  • 2 tbsps cold water .
  • 1 egg .
  • 2 c warm water (110 degrees to 115 degrees) .
  • 2 tsps salt .
  • 2 (1/4 oz) packages active dry yeast

Directions
  • Step #1 In a mixing bowl, dissolve yeast in warm water.
  • Step #2 Add the sugar, salt, butter, egg & 2 c flour.
  • Step #3 Beat until smooth.
  • Step #4 Stir in enough remaining flour to form a stiff dough.
  • Step #5 Place in a greased bowl, turning once to grease top.
  • Step #6 Cover up & put in the fridge for 2-24 hrs.
  • Step #7 Punch dough down.
  • Step #8 Turn onto a lightly floured surface; divide in half.
  • Step #9 Cut each into 16 pieces.
  • Step #10 Roll each piece into a 20-in.
  • Step #11 rope.
  • Step #12 Shape into a pretzel.
  • Step #13 Place on greased baking sheets.
  • Step #14 Beat egg yolk & cold water; brush over pretzels.
  • Step #15 Sprinkle top with coarse salt.
  • Step #16 Cover up & let rise in a warm place until doubled, about 25 mins.
  • Step #17 Bake at 400F degrees F for 15-20 mins or until golden brown.
  • Step #18 Remove from pans to wire racks to cool.
  • Step #19 **Cook time does not include refrigeration time of 2 - 24 hrs.
