Chocolate Crepes Recipe

Ingredients
  • 4 (1 oz) squares bittersweet chocolate
  • 1/2 c butter or margarine
  • 3/4 c all-purpose flour
  • 1 1/4 c nonfat evaporated milk
  • 3 c heavy cream
  • 1/2 c milk
  • 1/3 tbsp butter or margarine
  • 1 tsp instant coffee granules
  • 2 1/2 c confectioners' sugar
  • 6 tsps white sugar
  • 1 fluid oz cognac
  • 1 (3.9 oz) package instant chocolate pudding mix
  • 1/2 c water
  • 2 eggs

Directions
  • Step #1 Crepe batter: in a large bowl, water, flour, sugar, milk, 1 tsp butter, mix together eggs, & cognac.
  • Step #2 Filling: beat pudding mix, instant coffee & whipping cream together with an electric mixer until the mixture is thick.
  • Step #3 Sauce: in a small saucepan, melt the chocolate, butter, evaporated milk, & confectioners' sugar together until the mixture is a little thick.
  • Step #4 Crepes: heat a small skillet (or crepe pan) to a high temperature.
  • Step #5 Place a small amount of batter into the skillet & swirl it around until the batter covers the bottom of the pan.
  • Step #6 When the crepe is slightly browned flip the crepe over & let the other side brown for a few seconds.
  • Step #7 The first crepe will most likely not turn out well, but the rest will.
  • Step #8 Stack the crepes on top of each other to let tem cool before filling.
  • Step #9 Spoon the filling into the center of each crepe & roll the crepe up around it.
  • Step #10 Spoon the sauce over the crepes & serve.
