Leek And Potato Tart Recipe

Ingredients
  • 175 g gruyere cheese, grated .
  • 50 g walnuts, ground .
  • Filling .
  • Crust .
  • 300F ml sour cream .
  • 1 large egg yolk .
  • 450 g leeks, trimmed & sliced .
  • chives, to garnish .
  • 225 g plain flour .
  • 40 g butter .
  • 1 pinch nutmeg .
  • 3 medium eggs, lightly beaten .
  • 1 pinch salt .
  • 150 g butter, cubed .
  • 450 g new potatoes, scrubbed

Directions
  • Step #1 Heat oven to 200C/400F.
  • Step #2 Sift flour & salt into a bowl.
  • Step #3 Rub butter in with fingers until the mix resembles breadcrumbs.
  • Step #4 Add nuts.
  • Step #5 Mix egg yolk with a 3 tbsp water & add to bowl.
  • Step #6 Mix with hands to form a dough.
  • Step #7 Knead dough for a few mins to bring it together then wrap in cling film & chill for 20 mins.
  • Step #8 Roll out pastry & use it to line a very deep flan tin or an 8 inch springform tin.
  • Step #9 Chill for another 30 mins.
  • Step #10 Melt the butter over a high heat & cook the leeks for 2 - 3 mins Lower the heat & cook for a further 25 mins until very soft.
  • Step #11 Remove from heat.
  • Step #12 Cook the potatoes in boiling water until almost tender.
  • Step #13 Drain & slice.
  • Step #14 Add the leeks to the potatoes followed by the soured cream, cheese, eggs, nutmeg & seasoning if desired.
  • Step #15 Stir well & pour this into pastry case.
  • Step #16 Bake for 20 mins on the middle shelf.
  • Step #17 After 20 mins reduce heat to 190C/375F & cook for a further 30 mins The filling should be set.
