Diabetic Custard Ice Cream Recipe

Ingredients
  • 1 1/2 quarts whole milk .
  • 3 tbsps tapioca flour .
  • 1 1/2 tbsps liquid stevia .
  • 4 large eggs .
  • 1 tsp vanilla extract

Directions
  • Step #1 Mix sugar & flour.
  • Step #2 Stir in eggs.
  • Step #3 Set aside.
  • Step #4 Heat milk but do not boil.
  • Step #5 Pour hot milk into egg mixture; stir this to mix & return to medium heat.
  • Step #6 Stir constantly with a wooden spoon until mixture thickens.
  • Step #7 (Once it comes to boil, it won't thicken any more).
  • Step #8 Remove from heat.
  • Step #9 Stir in vanilla.
  • Step #10 This completes the custard.
  • Step #11 Leave plain for vanilla ice cream OR stir in the 3 c mashed fruit of your choice (peaches, strawberries, etc).
  • Step #12 Pour custard into ice cream maker canister & follow manufacturer's instructions for making the ice cream.
