Cowpoke Beans Recipe

Ingredients
  • 1 2/3 c canned stewed tomatoes
  • 1/2 tsp ground cumin
  • 1/4 c sliced fresh parsley
  • 2 c sliced onion
  • 2 tbsps butter
  • 1/2 tsp dried marjoram
  • 1 clove garlic, sliced
  • 1/2 tsp crushed red pepper flakes
  • 1 1/4 tbsps chili powder
  • 4 slices bacon, cooked & crumbled
  • 1 tsp salt
  • 1 lb dry pinto beans

Directions
  • Step #1 Soak pinto beans overnight with plenty of water to cover.
  • Step #2 Drain, remove to a large cooking pot, & cover with fresh water.
  • Step #3 Add the bacon, red chile flakes, & garlic.
  • Step #4 Bring to a boil, then reduce heat & let simmer, covered, for about 3 hrs.
  • Step #5 Melt butter in a large skillet over medium-high heat.
  • Step #6 Saute onion in butter until tender.
  • Step #7 Add the tomatoes, marjoram, cumin, parsley, & salt.
  • Step #8 Simmer over low heat/flame for about 45 mins to mix the flavors.
  • Step #9 When beans are tender, drain off any remaining water.
  • Step #10 Pour in the tomato mixture, & let simmer for an extra 20 mins, stirring every once in awhile.
  • Step #11 Serve hot.
