Rachael Ray's Cheesy "smashed" Cauliflower Recipe

Ingredients
  • 1 head cauliflower .
  • 1 tbsp olive oil .
  • 3 oz boursin cheese (or other garlic & herb soft cheese) .
  • 1/8 tsp grated nutmeg (optional) .
  • 1/4 c grated parmesan cheese (a handful) .
  • 1 c chicken broth

Directions
  • Step #1 Pour broth into a deep pot.
  • Step #2 Trim leaves & core off head of cauliflower.
  • Step #3 Place head of cauliflower in broth & drizzle with the olive oil.
  • Step #4 Cover up & bring to a boil.
  • Step #5 Reduce heat to medium & boil covered until tender, about 8 to 10 mins.
  • Step #6 Uncover & mash cauliflower w/potato masher.
  • Step #7 Allow liquid to cook off while you add cheeses & mash all together, about 2 to 3 mins.
  • Step #8 When all mixed & thickened, remove this from heat & season this with salt & pepper to taste, & nutmeg, if desired.
