Wine Basted Pork Medallions Recipe

Ingredients
  • 2 tbsps butter .
  • 1/2 lb fresh mushrooms .
  • 1 tsp beef bouillon .
  • 2 tsps fresh thyme .
  • 1/4 tsp kosher salt .
  • 1 1/2 lbs pork tenderloins .
  • 1 tbsp extra virgin olive oil .
  • 1/8 c flour .
  • 1 1/4 c dry marsala wine

Directions
  • Step #1 Trim silver from Pork Tenderloin, Using the tip of your Knife.
  • Step #2 Slide it under the silver & cut away from yourself.
  • Step #3 Cut Tenderloin into 1/2" Medallions.
  • Step #4 Combine Flour & salt & coat Medallions.
  • Step #5 Sauté Cut Up Mushrooms in the Olive Oil until Tender - Set aside.
  • Step #6 Melt Butter over Med High Heat.
  • Step #7 Add Pork Medallions & Cook for about 1 to 1-1/2 Minutes on Each side until Golden brown - Set aside Pork with the Mushrooms.
  • Step #8 De-glaze Pan with the Wine.
  • Step #9 Add Chopped Fresh Thyme & bouillon & bring to a Boil over Med High Heat for about a Minute.
  • Step #10 Add Pork & Mushrooms, Reduce the Heat & Simmer 2 Minutes or so until the Pork is Done & the Sauce is Thick.
