Sicilian Sizzled Cheese Sandwich Recipe

Ingredients
  • black pepper .
  • 2 tbsps red wine vinegar .
  • 4 slices country bread .
  • 12 oz provolone cheese, shredded .
  • 2 tbsps extra-virgin olive oil .
  • 4-6 marinated artichoke hearts, sliced .
  • 1 tbsp capers in brine, drained .
  • 1 tsp crumbed dried oregano .
  • 1-2 tsp sliced fresh flat-leaf parsley .
  • 4 garlic cloves, minced

Directions
  • Step #1 Preheat broiler; arrange artichokes on the bread slices & place on a baking sheet; top this with cheese.
  • Step #2 In a nonstick skillet, heat the olive oil over med-high heat; add in the garlic & lightly brown.
  • Step #3 Add in the red wine vinegar, oregano, capers, & black pepper; cook 1-2 mins or until the liquid reduces to about 2 tsps; stir in the the parsley.
  • Step #4 Spoon mixture over the cheese-topped bread.
  • Step #5 Broil until the cheese melts, bubbles, & turns golden in spots.
  • Step #6 Eat as soon as possible.
