Ingredients
1/2 tsp black pepper .
1 tbsp fresh lemon juice .
2 tbsps sliced fresh parsley .
3 chicken breasts, with skin on .
2 tbsps olive oil .
1/2 c chicken broth .
1 tsp salt .
1 tbsp butter .
1/4 c flour .
20 peeled garlic cloves .
1/2 c dry white wine
Directions
Step #1 Pat chicken dry.
Step #2 Spice up with Salt & Pepper.
Step #3 Dredge through flour.
Step #4 Heat oil in skillet over medium high heat until hot but not smoking.
Step #5 Brown on each side (starting with the skin side) turning once-about 5 mins on each side.
Step #6 Transfer to baking dish (skin side up) & put in oven at 350 degrees for about 10-15 mins until cooked throughout.
Step #7 When done, transfer chicken to platter & pour any juices from pan into skillet with already cooking sauce.
Step #8 While chicken is in oven, make the sauce.
Step #9 In skillet, add whole garlic cloves.
Step #10 Stir constantly until just golden brown (2 mins) being careful so it doesn't burn.
Step #11 Add wine & stir for 1 min, scraping all the chicken leftovers into mixture.
Step #12 Add broth & mix for 2 mins Cover up & let simmer until garlic is tender (15 mins).
Step #13 Take garlic out of sauce.
Step #14 Mash 8 garlic cloves & put back in sauce.
Step #15 Spice up with salt & pepper to taste.
Step #16 Let simmer for another 5 mins Put sauce through a strainer to get all chunks out & put back on stove.
Step #17 Bring sauce back up to a light boil.
Step #18 Put butter into sauce & mix until melted.
Step #19 Add a little cornstarch/cold water mix to sauce for it to thicken to desired thickness.
Step #20 (A little goes a long way!) Remove from heat.
Step #21 Add a squeeze of fresh lemon & parsley to sauce & mix.
Step #22 The lemon just gives the sauce an extra layer of flavor, so add to your preferred taste.
Step #23 Pour sauce over chicken.
