Crispy Peanut Butter Bars Recipe

Ingredients
  • 2 c miniature marshmallows .
  • 1/4 c butter or margarine .
  • TOPPING .
  • 2 c cocktail peanuts .
  • 2 c crisp rice cereal (Rice Krispies) .
  • 3/4 c light corn syrup .
  • 1/2 c butter or margarine, softened .
  • 1 (18 oz) package yellow cake mix .
  • CRUST .
  • 1 (10 oz) package peanut butter chips .
  • 2 tbsps peanut butter

Directions
  • Step #1 Preheat oven to 350F & grease a 9-inch by 13-inch baking pan.
  • Step #2 Mix together cake mix, peanut butter & butter until crumbly.
  • Step #3 Press into the bottom of prepared pan.
  • Step #4 Bake for 15 mins or until lightly browned.
  • Step #5 Top with marshmallows & return to oven until marshmallows are melted & light brown.
  • Step #6 Remove from oven & set side to cool.
  • Step #7 For topping, in a heavy saucepan, melt butter.
  • Step #8 Add corn syrup & PB chips & over low heat/flame, stir until mixture comes to a slow boil.
  • Step #9 Remove from heat & quickly stir in the peanuts & cereal.
  • Step #10 Dollop on top of marshmallow layer, spreading to cover.
  • Step #11 (a spoon or spatula sprayed with PAM makes this a little easier).
  • Step #12 Cool & cut into bars.
