Step #2 COATING: Stir together 1 c stuffing mix & 2 tsps Cajun seasoning in a small bowl, crushing any larger pieces with your fingers (this might be less messy if done in a zip-loc baggie).
Step #3 FISH: Rinse fish & pat dry; brush with 1 tbsp melted butter & roll in coating.
Step #4 Place in a shallow dish & sprinkle with any remaining coating.
Step #5 Bake until fish flakes easily with a fork, approximately 20 mins.
Step #6 TOPPING: While fish is baking, Cajun seasoning, stir this together remaining stuffing mix, 2 tbsps butter & water in a small bowl; cover & microwave on HIGH for 2 mins.
Step #7 When fish is cooked, cover with topping & a sprinkle of thyme & serve.
