Rice Noodle Cakes With Peanutty Veg Recipe

Ingredients
  • 100 g thin rice noodles .
  • 1 red chili, sliced .
  • 1 lime, juice of .
  • 230 g mixed vegetables, of your choice .
  • 2 spring onions, sliced .
  • 1 tsp ground coriander .
  • 2 garlic cloves, sliced .
  • 6 tbsps vegetable oil .
  • 2 tbsps dark soy sauce .
  • 100 ml coconut milk .
  • 5 cm fresh ginger, grated .
  • 2 tbsps crunchy peanut butter .
  • 1 medium egg, withe beaten

Directions
  • Step #1 Cook the noodles according to the packet.
  • Step #2 Drain & leave until they become sticky.
  • Step #3 Heat 1 tbsp of the oil & stir fry the garlic, ginger & chilli.
  • Step #4 Remove half of the mixture & set aside.
  • Step #5 Add the coconut milk, soy sauce, peanut butter, coriander & lime juice to the pan.
  • Step #6 Stir well & add 4 tbsp warm water stir until smooth & set aside.
  • Step #7 Add the reserved chilli mix to the rice noodles along with the egg white & spring onion & mix well.
  • Step #8 Form the mixture into 8 patties either with your hands or the aid of a metal ring.
  • Step #9 Heat 2 tbsp of the oil & cook the rice cakes for 3 mins each side.
  • Step #10 set aside.
  • Step #11 Either use a Y peeler to cut your veg into ribbons or slice finely.
  • Step #12 Stir fry in the remaining oil until tender (about 2 mins).
  • Step #13 Serve two noodle cakes per person topped with the stir fried veg & peanut sauce.
