Shrimp, Green Bean And Feta Pasta Salad Recipe

Ingredients
  • 2-4 tbsps sliced fresh dill .
  • 2 tbsps red wine vinegar .
  • 8 oz dried rotini pasta (or any similar size pasta) .
  • salt .
  • 1 tbsp lemon juice .
  • fresh ground black pepper .
  • 4 oz crumbled feta cheese .
  • 4 oz fresh green beans, trimmed & cut into 1- to 1 1/2-inch pieces .
  • 1 lb medium cooked shrimp, peeled & deveined

Directions
  • Step #1 Have ready a large bowl of ice water.
  • Step #2 In pot of boiling salted water, cook green beans until they turn bright green & start to soften.
  • Step #3 Transfer beans to ice water as soon as possible.
  • Step #4 When cool, drain them & pat them dry with a clean towel.
  • Step #5 Meanwhile, prepare pasta according to package directions (cook this until al dente.
  • Step #6 ).
  • Step #7 Drain pasta & rinse with cold water until pasta is completely cool & drain again until free of excess water.
  • Step #8 Set aside.
  • Step #9 In large bowl, mix cooked green beans, lemon juice, dill to taste, vinegar, olive oil, feta cheese, pasta, shrimp, salt & pepper to taste.
  • Step #10 Serve as soon as possible, or cover tightly & put in the fridge up to 2 days.
