Tivoli's Cilantro Grilled Chicken Breast Recipe

Ingredients
  • 1 tsp shallots, sliced .
  • 1/4 tsp cayenne pepper .
  • 1 c salsa, your favorite .
  • 1 tsp ground cumin .
  • 1/2 tsp black pepper .
  • 8 skinless boneless chicken breast halves .
  • 1/4 c fresh cilantro, sliced .
  • 2 garlic cloves, minced .
  • 1 tsp salt .
  • 6 tbsps lemon juice, juice from about 2 lemons .
  • 2 c olive oil

Directions
  • Step #1 Put chicken in a glass dish large enough to hold the chicken pieces in a single layer.
  • Step #2 Combine oil, pepper, shallots, cilantro, lemon juice, cumin, salt, cayenne & garlic.
  • Step #3 Pour mixture over the chicken & turn pieces to coat.
  • Step #4 Refrigerate, covered, at least 2 hrs, turning chicken every once in awhile.
  • Step #5 Remove chicken from the marinade, reserving marinade.
  • Step #6 Boil marinade & then leave at a simmer for use as a baste.
  • Step #7 Place chicken on oiled rack of gas grill over medium-high heat or on charcoal grill 4-6 inches from medium-hot coals.
  • Step #8 Cook, opaque, turning once & basting often with the heated marinade, 10-12 mins, or until chicken is firm, & light golden brown.
  • Step #9 Discard remaining marinade.
  • Step #10 Put 2 tbsps of salsa on each serving plate & put 1 piece of chicken on top of the salsa & serve as soon as possible.
