Ingredients
1/2 c whole wheat flour .
1/2 c warm water .
1 egg .
1/2 c low-fat small-curd cottage cheese .
1 1/4 oz active dry yeast .
1/4 c oats (optional) .
2 tbsps cold water .
1/4 c rye flour .
2 tbsps oil (not olive) .
1 tsp salt .
1 egg white .
2 tsps sesame seeds (approx.) .
1 1/2 c general purpose white flour .
1/4 c toasted wheat germ .
1/2-1 c general purpose white flour, as needed .
2 tbsps cornmeal (approx.) .
1/4 c honey
Directions
Step #1 Gently mix yeast into warm water until dissolved.
Step #2 Add cottage cheese, oil, salt, honey, egg & 1-1/2 c white general purpose flour.
Step #3 Beat with wooden spoon until smooth.
Step #4 Gradually beat in whole wheat flour, rye flour, oats (if using) & wheat germ.
Step #5 Add extra all-purpose flour as needed to make a soft dough (she used about a 1/2 c).
Step #6 Knead about 8-10 mins.
Step #7 Place in a greased bowl, turning dough so that the top is greased, too.
Step #8 Cover up with a towel & let rise in a warm place for about 75 mins.
Step #9 Punch down dough & let it rest for 10 mins.
Step #10 Shape dough into a ball.
Step #11 Grease a baking sheet (cookie sheet will work).
Step #12 Cover up baking sheet lightly with cornmeal.
Step #13 Place loaf on prepared baking sheet.
Step #14 Cover up with a towel & let rise in a warm place until doubled in size.
Step #15 Beat an egg white with 2 tbsps of cold water.
Step #16 Brush this mixture over the loaf.
Step #17 Sprinkle top loaf with sesame seeds, if desired.
Step #18 Bake in a 350 degree oven for 25-30 mins, or until golden brown.
