Green Quiche Recipe

Ingredients
  • 1/8 tsp garlic powder .
  • 1 c vegetable broth .
  • salt & pepper .
  • 2 tbsps prepared mustard .
  • 1/8 tsp turmeric (optional) .
  • 1 lb greens .
  • 1 small onion, coarsely sliced .
  • 21 oz silken firm tofu .
  • 1/2 tsp cumin

Directions
  • Step #1 Greens should be rinsed, well drained, finely sliced, & cooked.
  • Step #2 Drain well again after cooking.
  • Step #3 Note Tumeric is just for color.
  • Step #4 Preheat oven to 450 degrees.
  • Step #5 Coat a 9-inch pie plate with vegetable cooking spray.
  • Step #6 Set aside.
  • Step #7 In food processor/blender or mixer, process all ingredients except greens until smooth.
  • Step #8 In large bowl, mix with greens.
  • Step #9 Spoon into pie plate.
  • Step #10 Bake quiche about 65 mins in 450 degree oven, or until golden & knife inserted in center comes out clean.
