2 whole chipotle chiles in adobo (canned chipotle chiles) .
3 tbsps molasses .
3 lbs beef brisket .
2 bay leaves .
1/4 c apple cider vinegar .
1 Spanish onion, halved & thinly sliced .
1 tbsp chili powder .
2 tbsps vegetable oil .
2 tsps ground coriander .
5 garlic cloves, peeled & smashed .
2 tsps ground cumin .
kosher salt .
pickled jalapeno peppers .
fresh ground black pepper .
1 1/2 c water .
1 (14 1/2 oz) can whole canned tomatoes, with their juices .

Directions
Step #1 Spice up the beef generously with salt & pepper, to taste.
Step #2 Heat a large, heavy skillet over medium-high heat.
Step #3 Add the oil & heat just until beginning to smoke.
Step #4 Add the meat & cook, turning once, until browned on both sides, about 10 mins total.
Step #5 Transfer the meat to the slow cooker (aka crockpot); leave the skillet on the heat.
Step #6 Add garlic, onion, & cumin to drippings in the skillet & stir until fragrant, chili powder, coriander, about 1 min.
Step #7 Add vinegar & boil until it's almost gone, scraping the bottom of the pan with a wooden spoon.
Step #8 Stir in water & pour the mixture over the brisket.
Step #9 Crush the tomatoes through your fingers into the slow cooker (aka crockpot); add the tomato juices, chipotles, bay leaves, & molasses.
Step #10 Cover up the cooker, set it on LOW, & cook the brisket until it pulls apart easily with a fork, about 8-10 hrs.
Step #11 To serve, leave the meat in the slow cooker (aka crockpot) & use 2 forks to pull it apart & stir it evenly into the sauce; season this with salt & pepper, to taste.
Step #12 Remove & discard bay leaves.
Step #13 Pile the meat on sandwich buns & serve this with jalapenos.
