Lulu's Carrot Cupcakes Recipe

Ingredients
  • 1 tbsp whole milk .
  • 1/2 c all-purpose flour .
  • 2 eggs .
  • 2 c confectioners' sugar .
  • 1 1/2 c grated carrots .
  • 1 c granulated sugar .
  • 4 oz light cream cheese, softened .
  • 1 tsp baking powder .
  • 1 c sliced walnuts .
  • Frosting .
  • 1 tsp pure vanilla extract .
  • 1 c vegetable oil .
  • 1/2 tsp baking soda .
  • 1/2 tsp cinnamon .
  • 1/2 c cake flour .
  • 1 c sliced dried pineapple .
  • 6 tbsps unsalted butter, softened

Directions
  • Step #1 Set oven to 350 degrees.
  • Step #2 Have on hand a muffin tin & line it with pleated paper or foil wrap baking c.
  • Step #3 In a large bowl, sift together flour, baking powder, cake flour, baking soda, & cinnamon & set aside.
  • Step #4 In a separate bowl, using a hand mixer on medium speed, beat eggs & sugar until smooth.
  • Step #5 Add the oil & mix until incorporated.
  • Step #6 Using a wooden spoon, then fold in carrots, stir the flour mixture into the egg mixture until incorporated, walnuts, & pineapple.
  • Step #7 Be careful not to overmix.
  • Step #8 Pour batter into c.
  • Step #9 Bake 25 to 30 mins or until a cake tester inserted in the center comes out clean.
  • Step #10 Cool in pans on a wire rack before frosting.
  • Step #11 For the frosting:.
  • Step #12 In a small bowl using a hand mixer on medium speed, milk, beat the cream cheese & butter together until smooth, Add sugar, & vanilla & beat another 5 mins or until very fluffy.
