Ingredients
1/3 lb salt pork or bacon .
for the beans .
1 large onion, sliced fine or 1 leek, sliced fine .
1 tbsp flour .
1 tsp black pepper .
options .
6 fresh garlic cloves, sliced fine .
3 bay leaves .
2 lbs beef or venison .
1 tbsp cumin, use more to taste .
2 c pinto beans or red kidney beans .
1 quart tomatoes, canned or fresh tomatoes .
1/4 tsp oregano .
1 tbsp salt .
3 small dried chilies or habanero peppers .
1 tbsp oregano .
6 tbsps chili powder .
2 tbsps lard or bacon grease .
4 tbsps beer or water .
1 lb fresh pork or wild pig (javelina)
Directions
Step #1 Cut the meat into cubes about 1/2 inch square or use ground meat.
Step #2 Melt the suet or bacon grease In a large-ish pot or pan with a cover.
Step #3 Put the sliced onion & garlic in the pot & brown.
Step #4 Mix the chilli powder & flour with enough cold water to form a thin paste, then mix with the onion & garlic after they are browned.
Step #5 Stir until smooth.
Step #6 Add meats to pan along with 4 tbls water or beer.
Step #7 Now add the other herbs, spices & tomatoes.
Step #8 Cook slowly for 2 to 4 hrs; add liquid as needed to just keep from burning but add as little as possible.
Step #9 When cooked serve in a bowl over beans prepared as follows:.
Step #10 Pick over the beans** & discard any bad ones.
Step #11 Soak the beans in water over night or quick soak by covering the beans with water & bringing to a boil.
Step #12 Boil 1 min, cover & let sit for 1 hr.
Step #13 Drain off the water & cover with fresh water.
Step #14 Add 1 tsps of baking soda.
Step #15 Add salt pork or bacon & oregano.
Step #16 Boil over med-heat/flame for 3 to 4 hrs or until tender.
Step #17 Add water as water boils away.
Step #18 Drain & serve the chilli over the beans.
Step #19 **I prefer pinto beans in this recipe.
