Chocolate Cherry Chip Cake Recipe

Ingredients
  • 1/2 tsp salt

  • 3/4 c unsweetened cocoa powder
  • 2 tsps vanilla extract
  • 2 tbsps vanilla extract
  • 2 c miniature semisweet chocolate chips
  • 1 (10 oz) jar maraschino cherries, drained
  • 2 c all-purpose flour
  • 2 eggs
  • 4 c confectioners' sugar
  • 1 c strong brewed coffee
  • 1/2 c vegetable oil
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 c white sugar
  • 1 c milk
  • 4 tbsps milk
  • 1/2 c butter, softened
  • 2 tsps baking soda

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9x13 inch pan.
  • Step #3 In a large bowl, cocoa, baking powder, mix flour, sugar, soda & salt.
  • Step #4 Add eggs, milk, coffee, oil & vanilla.
  • Step #5 Beat until smooth (batter will be thin).
  • Step #6 Fold in cherries & chocolate chips.
  • Step #7 Pour batter into 9x13 inch pan.
  • Step #8 Bake at 350 degrees F (175 degrees C) for 35 mins or until toothpick inserted into middle comes out clean.
  • Step #9 It's best to leave it in the pan, because the chips & the cherries sort of sink to the bottom & solidify & will stick big time! Frost with white buttercream.
  • Step #10 For the frosting: In a large bowl, mix butter, confectioners sugar, 1/2 tsp salt & vanilla.
  • Step #11 Cream with an electric mixer.
  • Step #12 Add milk by the tbsp until frosting is smooth.
