High Protein Raisin Bran Muffins Recipe

Ingredients
  • 1/4 c oat bran .
  • 1 c whole wheat pastry flour .
  • 1/4 c vegetable oil .
  • 1/4 c raisins .
  • 2 c kelogg's extra fiber all-bran cereal .
  • 1/4 c nonfat milk .
  • 1-2 scoop 100% any whey .
  • 1/4 tsp salt .
  • 1/4 c egg substitute .
  • 1 tbsp baking powder .
  • 1/2 c Splenda granular

Directions
  • Step #1 In a mixing bowl, flour, stir this together 100% ANY WHEY, baking powder, Splenda, & salt.
  • Step #2 In large mixing bowl, oat bran, mix cereal, raisins, & milk.
  • Step #3 Let stand about 5 mins or until cereal softens.
  • Step #4 Add egg substitute & vegetable oil; beat well.
  • Step #5 Add flour mixture, stirring only until mixd.
  • Step #6 Portion batter evenly into six muffin pan c coated with cooking spray.
  • Step #7 Bake at 400F for about 20 mins or until lightly browned.
