Oven Baked Vegetable Soup Recipe

Ingredients
  • 1200 ml vegetable stock .
  • 1 onion, sliced .
  • 1 large parsnip, sliced .
  • 2 bay leaves .
  • 4 tbsps vegetable oil .
  • 175 g swede, sliced .
  • 2 large carrots, sliced .
  • 1 leek, sliced .
  • 4 rosemary sprigs .
  • 2 tsps honey .
  • 4 ripe tomatoes, quartered .
  • 2 garlic cloves, sliced

Directions
  • Step #1 heat oven to 200C(400F).
  • Step #2 Toss all veg except tomatoes with the honey & oil in a roasting dish.
  • Step #3 Add the herbs & roast for 30 mins.
  • Step #4 Add the tomatoes, reduce heat to 190C(375F) & roast for another 30 mins.
  • Step #5 Remove herbs & liquidize the remaining vegetables adding stock until you reach the desired consistency.
  • Step #6 Place soup in an ovenproof dish & bake for a further 20 mins, serve this with hot buttered toast.
