3 ripe mangoes, peeled, pitted & cut into small pieces .
1 tbsp cornflour .
12 spring roll wrappers .
1/2 vanilla pod
Directions
Step #1 Bring the water & sugar to a boil in a saucepan, & add the vanilla pod & lime juice.
Step #2 Simmer for about 20 mins.
Step #3 Allow to cool & remove the vanilla pod.
Step #4 Add the mango pieces.
Step #5 Leave to marinade in the syrup for 2 hrs (or overnight).
Step #6 Place a little of the filling on each strip of spring roll or filo pastry & fold up in a triangular shape.
Step #7 Use a little cornflour & water mixed to a paste to seal.
Step #8 Heat the oil & deep fry the samosas until golden brown, drain on kitchen paper & serve this with coconut cream or a selection of exotic fruits such as lychees, rambutans, mangoes, kiwi fruit or star fruit.
