Penne And Artichoke Hearts With Gorgonzola Sauce Recipe

Ingredients
  • 2 tbsps heavy cream .
  • fresh ground black pepper, to taste .
  • 1/8 c extra virgin olive oil .
  • 6 oz penne pasta .
  • 1 pinch onion powder, a tiny pinch .
  • 2 tbsps fresh parsley, minced .
  • 1 pinch crushed red pepper flakes, a pinch .
  • 5 oz frozen artichoke hearts, thawed & quartered .
  • 1/4 lb gorgonzola .
  • 1/4 c heavy cream, plus .
  • toasted pine nuts, for garnish .
  • 1 garlic clove, minced

Directions
  • Step #1 Boil water for pasta & cook according to package directions, reserving some of cooking water when draining.
  • Step #2 While pasta is cooking, heat olive oil in large skillet over med-heat/flame.
  • Step #3 Add garlic & saute for 1 to 2 mins.
  • Step #4 Drain artichoke hearts well, add to skillet & saute 3 to4 mins.
  • Step #5 Add cheese & heavy cream.
  • Step #6 Simmer a few mins until cheese melts.
  • Step #7 Spice up with black pepper, onion powder & red pepper then set aside.
  • Step #8 Add hot, drained pasta to sauce mixture, thinning if needed with pasta cooking liquid.
  • Step #9 Toss with minced parsley then transfer to serving vessel.
  • Step #10 Top with toasted pine nuts then serve at once.
