Step #1 Boil water for pasta & cook according to package directions, reserving some of cooking water when draining.
Step #2 While pasta is cooking, heat olive oil in large skillet over med-heat/flame.
Step #3 Add garlic & saute for 1 to 2 mins.
Step #4 Drain artichoke hearts well, add to skillet & saute 3 to4 mins.
Step #5 Add cheese & heavy cream.
Step #6 Simmer a few mins until cheese melts.
Step #7 Spice up with black pepper, onion powder & red pepper then set aside.
Step #8 Add hot, drained pasta to sauce mixture, thinning if needed with pasta cooking liquid.
Step #9 Toss with minced parsley then transfer to serving vessel.
Step #10 Top with toasted pine nuts then serve at once.
