Goats Cheese And Pomegranate Couscous With Pine Nuts Recipe

Ingredients
  • 2 tbsps toasted pine nuts .
  • 150 g couscous .
  • 175 ml vegetable stock .
  • 2 tbsps sliced fresh coriander or fresh mint .
  • 200 g firm goat's cheese, crumbled .
  • 1 pomegranate, seeds of .
  • 2 tbsps extra virgin olive oil .
  • 1/2 lime, juice of .
  • 1 tbsp pomegranate molasses

Directions
  • Step #1 Place the couscous In a large-ish bowl & cover with the hot stock.
  • Step #2 Set aside for 10 mins until the grains are tender & all the liquid has been absorbed.
  • Step #3 Mix together the dressing of olive oil, molasses & lime juice.
  • Step #4 Fluff up the couscous using a fork.
  • Step #5 Gently stir through the cheese, pomegranate seeds, herbs & pine nuts.
