Stir Fried/braised Bok Choy Recipe

Ingredients
  • 1 tbsp tamari .
  • 1/2 c white onions, sliced .
  • 2 small carrots, sliced thinly on the diagonal .
  • 4 c bok choy, washed & sliced .
  • 1 tbsp peanut oil .
  • 1/3 c vegetable broth .
  • 1 c mushrooms, stemmed & sliced .
  • 3-4 green onions, sliced

Directions
  • Step #1 Heat the peanut oil in a wok over high heat.
  • Step #2 Add the white onion & cook 3 mins until brown & crispy.
  • Step #3 Add the carrots & stir fry another 3 mins.
  • Step #4 Add the bok choy, green onions & mushrooms & stir fry an extra 2 mins.
  • Step #5 Pour the broth over the vegetables & let simmer for 2 mins.
  • Step #6 Spice up with tamari & serve over a bed of brown rice.
  • Step #7 Yield is estimated as a side dish.
