Lemon Cream Chicken Recipe

Ingredients
  • 1/2 c all-purpose flour .
  • 1/2 tsp fresh ground black pepper .
  • 1 c chicken broth .
  • 1 c whipping cream, divided .
  • 4 tbsps lemon juice .
  • 1 tbsp all-purpose flour .
  • 1/4 c butter .
  • 1/2 tsp salt .
  • 1/2 lb fresh mushrooms, sliced .
  • 6 boneless skinless chicken breast halves

Directions
  • Step #1 In a large resealable plastic bag, mix 1/2 c flour, salt & pepper.
  • Step #2 Add chicken & shake to coat.
  • Step #3 In a large skillet, cook chicken in butter for 8 to 9 mins on each side or until juices run clear.
  • Step #4 Remove chicken & keep warm.
  • Step #5 Add broth to the pan drippings.
  • Step #6 Bring to a boil over med-heat/flame & stir this to loosen browned bits from pan.
  • Step #7 Simmer, uncovered, for 10 mins or until broth is reduced to 1/3 c.
  • Step #8 Stir in 3/4 c cream, lemon juice & mushrooms.
  • Step #9 Cook over medium-low heat for 5 mins.
  • Step #10 Combine remaining flour & cream until smooth; stir in theto skillet.
  • Step #11 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #12 Return chicken to skillet & heat through.
