Chicken Stock Recipe

Ingredients
  • 1 large onion, halved
  • 7 c water
  • 1 tsp grated fresh ginger
  • 3 carrots, cut into 2 inch pieces
  • 3 stalks celery
  • 1 bay leaf
  • 4 lbs chicken
  • salt to taste

Directions
  • Step #1 Place the chicken in a large pot over high heat.
  • Step #2 Add water to cover & bring to a boil, then reduce heat to medium low & let simmer for 1 hr.
  • Step #3 Remove chicken from pot.
  • Step #4 Leave water in pot.
  • Step #5 Cool chicken.
  • Step #6 Remove skin & bones from meat.
  • Step #7 Return bones & skin to pot.
  • Step #8 Add onions, bay leaf, ginger, carrots, celery, & salt.
  • Step #9 Continue simmering for 3 to 4 hrs.
  • Step #10 Strain & cool the stock, uncovered.
  • Step #11 Use the meat for soups, sandwiches, salads, or other dishes where cooked chicken is needed.
  • Step #12 After stock has been defatted, use or freeze as soon as possible.
  • Step #13 I freeze the stock in one-c amounts & use instead of water for cooking rice or vegetables or making gravy.
