South Of The Border Potato Salad Recipe

Ingredients
  • 1/8 tsp pepper .
  • 1 dash Tabasco sauce .
  • 2 tbsps olive oil .
  • 3/4 c light cream (or mayo) .
  • 1 tsp salt .
  • 3 eggs, hard-cooked & sliced .
  • 2 tbsps chili peppers, finely sliced .
  • 3 tbsps olives, sliced .
  • 1/8 tsp prepared mustard .
  • 3 tbsps onions, grated .
  • 1 c cheddar cheese, shredded .
  • 3 c potatoes, cooked & sliced .
  • 1 c lettuce, shredded

Directions
  • Step #1 In a medium bowl mix potatoes & lettuce; toss.
  • Step #2 In a small bowl, pepper, mix cheese, salt, olive oil, onions, olives, chili pepper, eggs, mustard & Tabasco sauce.
  • Step #3 Stir until thoroughly mixed.
  • Step #4 Gradually add cream.
  • Step #5 Stir constantly until well mixed.
  • Step #6 Pour dressing over potato-lettuce mixture.
  • Step #7 Toss to coat well.
  • Step #8 Cover up & chill until serving.
