Honey-poached Pears W/brown Sugar Cream (#7) Recipe

Ingredients
  • 1/2 vanilla bean (split & scraped, pod reserved) .
  • 5 tbsps honey .
  • 1/2 small cinnamon stick .
  • 2 tbsps lemon juice .
  • 2 large pears (firm but ripe, peeled, halved & cored) .
  • 1 c water .
  • 1 c sour cream .
  • 1 tbsp brandy (or dark rum) (optional) .
  • 1 tbsp brown sugar .
  • 1/2 c dry white wine

Directions
  • Step #1 In a lrg bowl, toss pear halves w/lemon juice & set aside.
  • Step #2 In a med saucepan, mix water, wine & honey.
  • Step #3 Add vanilla seeds & pod & cinnamon stick.
  • Step #4 Stir over med heat til honey dissolves & add pears.
  • Step #5 Cover up mixture & reduce heat to med-low.
  • Step #6 Simmer til pears are just tender when pierced, turning when halfway through cooking (about 15 min).
  • Step #7 Using slotted spoon, transfer pears to lrg bowl.
  • Step #8 Boil poaching liquid til reduced to slightly syrup consistency (about 2 min) & set aside to cool.
  • Step #9 Pour syrup over pears.
  • Step #10 Cover up & put in the fridge overnight or up to 24 hrs.
  • Step #11 Whisk sour cream, sugar & brandy (if using) in lrg bowl till smooth.
  • Step #12 Whisk in 1 to 1 1/2 tbsp chilled poaching syrup.
  • Step #13 To Serve; Place ea pear half on a dessert plate.
  • Step #14 Thinly slice ea half lengthwise, leaving slices attached at stem end.
  • Step #15 Gently press on pears to fan slightly.
  • Step #16 Spoon some syrup over ea pear half, spoon sour cream mixture beside them & serve.
