Slimmer Carrot Raisin Salad Recipe

Ingredients
  • 2 lbs carrots .
  • 1 c raisins .
  • 1/8 c confectioners' sugar .
  • 1/8 c Splenda sugar substitute .
  • 1 c light mayonnaise .
  • 1 (20 oz) can crushed pineapple with juice, drained

Directions
  • Step #1 Soak raisins in hot water for 10 mins to rehydrate them.
  • Step #2 Drain well.
  • Step #3 Peel carrots.
  • Step #4 Shred in food processor/blender.
  • Step #5 Place shredded carrots, raisins & pineapple in large bowl.
  • Step #6 Combine remaining in small bowl & stir in theto carrot mixture.
  • Step #7 Cover up with plastic wrap & put in the fridge at least 2 hrs.
