Espresso Chocolate Chip Cookies Recipe

Ingredients
  • 2 1/4 c cake flour, sifted .
  • 1 1/4 c butter, softened overnight at about room temp .
  • 2 tsps vanilla extract .
  • 3 tbsps whole espresso beans .
  • 1/2 tsp salt .
  • 2 large eggs .
  • 12 oz white chocolate chips .
  • 2 c sugar .
  • 3/4 c dark cocoa .
  • 1 tsp baking soda

Directions
  • Step #1 Heat oven to 350°F.
  • Step #2 Grind the espresso beans to a fine powder.
  • Step #3 Combine flour, cocoa, ground espresso beans, baking soda & salt.
  • Step #4 In a stand mixer, cream butter & sugar at medium speed until light & fluffy (~5 min).
  • Step #5 Add eggs & vanilla extract.
  • Step #6 Beat well at medium speed for 2 min.
  • Step #7 Slowly add the flour/cocoa to the creamed mixture over 12 mins.
  • Step #8 If the powder escapes the mixer, you are adding it too quickly! Stir in chocolate chips at slowish speed to give the final cookie dough.
  • Step #9 Using a leveled ice cream scoop, drop measures onto parchment paper on a cookie sheet.
  • Step #10 Leave the space of a drop between each new one.
  • Step #11 Bake for 9 mins.
  • Step #12 The cookies will rise & still be soft when removed from the oven.
  • Step #13 Cool for 5 min on the sheet.
  • Step #14 Transfer to a wire rack to cool completely.
