Step #1 Combine whole wheat flour, all purpose flour, & salt In a large-ish bowl.
Step #2 Stir in butter & warm water to make a smooth dough.
Step #3 Turn out onto lightly floured surface & knead 3 or 4 times, until smooth ball forms.
Step #4 Cover up dough with towel & let rest for 1 hr.
Step #5 Dust with flour, stack, & cover with towel or plastic wrap.
Step #6 Heat electric griddle to 450°F (or heat griddle or skillet over high heat until drop of water boz off surface).
Step #7 Cook chapatis, 1 at a time, until flecked with brown spots, about 2 mins on each side.
Step #8 Brush with melted butter & stack as you remove them from the griddle.
Step #9 Wrap to keep warm & pliable.
Step #10 Serve as soon as possible.
Step #11 Or, wrap & freeze.
Step #12 POORI: Heat 1 inch of vegetable oil in large skillet to 375°F fry chapati dough rounds one at a time until puffed, bubbly, & brown, about 2 mins for each side.
