Roast Pork W/ Celery Root And Carrots Recipe

Ingredients
  • 1 tbsp butter .
  • To garnish .
  • salt & pepper .
  • 6 oz celery root, cut into matchsticks .
  • 2 tbsps breadcrumbs, fresh .
  • 1/2 tsp thyme, sliced .
  • 1 garlic clove, sliced .
  • 1 leek .
  • 1/2 c shredded gruyere cheese .
  • 1/2 tsp sage, sliced .
  • 2 tbsps butter, softened .
  • 2 lbs pork loin, skin & half the fat removed .
  • 4 tsps mustard .
  • 6 oz carrots, cut into matchsticks

Directions
  • Step #1 Cut a pocket between the fat & meat of the loin.
  • Step #2 Reserve the outside leaves of the leek.
  • Step #3 Chop the remainder & fry until softened in butter.
  • Step #4 Mix the cheese, half the mustard, bread crumbs, seasoning & leeks together.
  • Step #5 Place in the pocket, & secure joint with string.
  • Step #6 Mix the softened butter, remaining mustard, thyme & sage & rub into the pork.
  • Step #7 Pierce the loin & insert garlic slices.
  • Step #8 Place on a trivet in a roasting pan & cook in a preheated oven at 425F degrees F for 15 mins, then at 350 degrees for 1 to 1 1/4 hrs.
  • Step #9 Place the reserved leek leaves in a bowl of boiling water to soften for 2 to 3 mins.
  • Step #10 Boil carrots & celery root until just tender.
  • Step #11 Drain the leeks & cut into narrow strips.
  • Step #12 Make bundles of carrots & celery root & tie with the leek strips.
  • Step #13 Remove the string from the roast & place on a warm dish.
