French Fries Recipe

Ingredients
  • 1 (5 oz) can evaporated milk .
  • 2 c flour .
  • 2 lbs russet potatoes .
  • sea salt (to taste) .
  • fresh ground black pepper .
  • peanut oil, for frying

Directions
  • Step #1 Heat a deep-fryer or a deep pot no more than half filled with oil to 325F degrees F.
  • Step #2 Peel & slice potatoes to size of your desire & fry them for 2 mins - this isn't to make them crispy, it is just to blanch them.
  • Step #3 Drain & cool fries.
  • Step #4 Raise temperature of fryer or oil to 360 degrees F.
  • Step #5 Add salt & pepper to the flour & mix.
  • Step #6 Take fries & dip first into the evaporated milk, shaking off excess, & then into the flour mixture, shaking off excess.
  • Step #7 Fry for about 5 mins, until browned.
