Very Speciale Spaghetti Sauce Recipe

Ingredients
  • 2 tsps salt .
  • 12 (12 oz) cans water .
  • 1/8 tsp cayenne pepper .
  • 3 (12 oz) cans tomato paste .
  • fresh coarse ground black pepper, to taste .
  • 3 garlic cloves, coarsely sliced .
  • 2 tsps sugar .
  • 2 tbsps italian seasoning (or a mix of thyme, basil, oregano & sage) .
  • 1 1/2 lbs ground beef (or 1 lb ground beef & 1/2 lb ground pork) .
  • 2-3 tbsps extra virgin olive oil .
  • 2 onions, sliced finely

Directions
  • Step #1 Combine tomato paste & water In a large-ish pot, stir over medium high heat until tomato paste is dissolved (about 2-3 mins).
  • Step #2 Saute the onion & garlic in the olive oil in a separate skillet over medium high heat(can also add green bell pepper & mushrooms, if desired).
  • Step #3 Saute until onion is translucent & dump into the pot.
  • Step #4 Add the Italian seasoning, salt, cayenne, sugar & pepper.
  • Step #5 Reduce heat & let simmer 2 hrs, stirring every 15 mins (but you can never stir it too much).
  • Step #6 Brown the ground beef in a skillet, then add to the pot.
  • Step #7 Simmer another hr.
  • Step #8 My mother-in-law likes to add a little extra olive oil sometimes when it is cooking.
  • Step #9 Also, taste it often & adjust seasonings.
  • Step #10 If it gets too thick, add more water.
  • Step #11 If it is too thin, add more tomato paste.
