5-vegetable Fried Rice With 5-spice Pork Recipe

Ingredients
  • 1/2 lb shiitake mushrooms, stemmed & thinly sliced .
  • 2 c chicken broth .
  • 1 red bell pepper, seeded & thinly sliced .
  • 1 c frozen peas, thawed .
  • 1/3-1/2 c tamari (dark soy sauce) .
  • 1 1/2 c long-grain white rice .
  • 1 scallion, thinly sliced on an angle .
  • 3/4 c water .
  • 3 garlic cloves, finely sliced .
  • 2 small carrots, shredded (enough to equal a couple of handfuls) .
  • 2 large eggs, beaten .
  • 5 tbsps vegetable oil .
  • 2 tsps Chinese five spice powder .
  • 1 lb thin pork loin chops, thinly sliced .
  • salt & freshly ground black pepper .
  • 1 piece fresh ginger (2-inch piece peeled & grated)

Directions
  • Step #1 In a medium saucepan, bring the broth & water to a boil.
  • Step #2 Stir in rice, cover & cook over low heat/flame for 18 mins.
  • Step #3 Fluff with a fork & spread on a baking sheet to cool.
  • Step #4 In a large, deep nonstick skillet or wok, heat 2 tbsps oil over high heat.
  • Step #5 Spice up the pork with salt, pepper, & five-spice powder; add to the pan & stir-fry for 3 mins.
  • Step #6 Transfer to a plate.
  • Step #7 Heat 1 tbsp oil in the skillet, then add the eggs & scramble for 2 mins.
  • Step #8 Push the eggs to the side of the pan, add the remaining 2 tbsps oil & lower the heat to medium.
  • Step #9 Add the mushrooms, red bell pepper & carrots & stir-fry for 2 mins.
  • Step #10 Add the scallion, peas, garlic & ginger & stir-fry for 1 min.
  • Step #11 Add the cooked rice & crisp it for a couple of mins.
  • Step #12 Stir in the tamari & reserved pork.
