Chocolate Ganache Tart Recipe

Ingredients
  • 6 tbsps sugar .
  • 2 tsps grated orange zest (optional) or lemon zest (optional) .
  • 12 oz bittersweet chocolate, coarsely sliced (we have used Valhrona & Ghirardelli) .
  • 3 tbsps blanched slivered almonds .
  • 6 tbsps unsalted butter, cold & cut into pieces (no substituions) .
  • 1 tsp vanilla extract .
  • 1/4 tsp salt .
  • 1 3/4 c all-purpose flour .
  • 1 1/4 c heavy cream

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 MAKE DOUGH:.
  • Step #3 In a food processor/blender, pulse almonds until finely ground.
  • Step #4 Add sugar, zest (if desired), flour, & salt; pulse until mixd.
  • Step #5 Add butter, pulsing until coarse crumbs form with no large butter lumps (dough should clump together when squeezed with fingers).
  • Step #6 Immediately transfer dough to a 9-inch tart pan with a removable bottom.
  • Step #7 Using a measuring c, evenly press dough in bottom & up sides of pan.
  • Step #8 Bake in center of oven until golden brown & firm to the touch, about 20 mins.
  • Step #9 Transfer to a wire rack to cool completely, about 1 hr.
  • Step #10 MAKE GANACHE:.
  • Step #11 Place chocolate In a large-ish mixing bowl.
  • Step #12 In a small saucepan, bring cream to a boil.
  • Step #13 Pour hot cream, through a sieve, over chocolate.
  • Step #14 Stir until smooth & creamy in texture.
  • Step #15 Mix in vanilla.
  • Step #16 Pour chocolate mixture into center of cooled tart shell (if chocolate is lumpy, pass through a sieve).
  • Step #17 Let stand until set, about 2 hrs, or chill for 1 hr.
