Two Bean Soup Recipe

Ingredients
  • 2 green onions, sliced .
  • 1/2 lb dried baby lima beans .
  • 2 medium carrots, sliced .
  • 1/2 lb dried great northern beans .
  • 1/8 tsp ground ginger .
  • 3 garlic cloves, minced .
  • 2 celery ribs, with leaves sliced .
  • 1 (49 oz) can reduced-sodium chicken broth .
  • 1 medium onion, sliced .
  • 1 1/2 c cubed fully cooked lean ham

Directions
  • Step #1 Place beans In a large-ish saucepan or Dutch over; add water to cover by 2 inches Bring to a boil; boil for 2 mins.
  • Step #2 Remove from the heat; cover & let this stand for 1 hr.
  • Step #3 Drain & rinse beans, discarding liquid.
  • Step #4 Return beans to pan.
  • Step #5 Add broth & ham; bring to a boil.
  • Step #6 Reduce heat; cover & let simmer for 1 hr.
  • Step #7 Add the onion, celery, carrots, garlic & ginger; return to a boil.
  • Step #8 Reduce heat; cover & let simmer 30 mins longer or until beans & vegetables are tender.
  • Step #9 Garnish with onions.
