Corn And Pepper Stuffed Zucchini Recipe

Ingredients
  • 2 tbsps sliced red bell peppers .
  • 1 tbsp water .
  • 2 tsps olive oil or vegetable oil .
  • 3/4 c frozen whole kernel corn, thawed or cooled cooked fresh corn kernels .
  • 1/8 tsp salt .
  • 1 tbsp sliced fresh basil or 1/2 tsp dried basil .
  • 4 small zucchini (about 6 inches long) .
  • 2 medium green onions, thinly sliced (2 tbsps)

Directions
  • Step #1 Cut zucchini lengthwise in half; place zucchini & water in microwavable dish.
  • Step #2 Cover up with plastic wrap, folding back one edge or corner 1/4 inch to vent steam.
  • Step #3 Microwave on High 3 to 5 mins or until zucchini is crisp-tender.
  • Step #4 When cool enough to handle, scoop centers from zucchini, leaving 1/4-inch shells.
  • Step #5 Mix remaining ingredients.
  • Step #6 Spoon about 2 tbsps corn mixture into each zucchini shell.
