Yucatan - Style Chicken And Vegetable Soup Recipe

Ingredients
  • 2 c coarsely sliced tomatoes .
  • 1 lime, cut into wedges .
  • 1 tbsp extra-virgin olive oil .
  • 3 medium carrots, sliced .
  • 2 tbsps sliced fresh cilantro .
  • 1 large onion, sliced .
  • 3-4 garlic cloves, sliced .
  • 5 c chicken broth or turkey stock .
  • optional garnish .
  • 2 medium zucchini, sliced .
  • 1-2 chipotle chile in adobo, sliced (canned) .
  • 1 avocado, pitted, peeled, & sliced .
  • 1/3 c sour cream .
  • 1 lb sliced cooked chicken .
  • 1/8 tsp kosher salt .
  • 2 tbsps sliced fresh cilantro

Directions
  • Step #1 In a 4-quart Dutch oven, heat oil over medium-high heat.
  • Step #2 Add onion, saute for 3 mins.
  • Step #3 Add garlic, & chipotle peppers.
  • Step #4 Cook & stir for 3 mins.
  • Step #5 Add carrots.
  • Step #6 Cook & stir for 4 mins more.
  • Step #7 Add broth, tomatoes, zucchini,and salt.
  • Step #8 Bring to boiling; reduce heat.
  • Step #9 Cover up & let simmer for 10 mins.
  • Step #10 Add turkey, & sliced cilantro, cover & cook for 5 mins more.
  • Step #11 Place in bowls.
  • Step #12 Serve with optional garnishes (avocado, lime wedges, & cilantro sprigs)on the side.
