Weight Watcher's Lobster And Shrimp Fra Diavolo Recipe

Ingredients
  • 1/2 lb lobster meat, cooked, cut into bite-size pieces .
  • 1/2 lb large shrimp, peeled & deveined .
  • 1/4 tsp crushed red pepper flakes .
  • 1 (14 1/2 oz) can crushed tomatoes .
  • 1/4 c tomato paste .
  • 4 tsps extra-virgin olive oil .
  • 1/2 tsp thyme .
  • 3 garlic cloves, minced .
  • 1/2 lb fresh linguine

Directions
  • Step #1 Cook linguine according to package directions, omitting salt if desired.
  • Step #2 Drain & transfer to serving bowl.
  • Step #3 Heat 2 tsps of oil In a large-ish non-stick skillet over medium-high heat.
  • Step #4 Add shrimp & cook just until opaque in the center.
  • Step #5 (1-1/2 to 2 mins per side)Transfer to a plate.
  • Step #6 Heat 1 tsp of the oil in the same pan & add the lobster pieces, stirring frequently until just heated through.
  • Step #7 Transfer to the plate with the shrimp.
  • Step #8 Heat remaining 1 tsp of oil in the skillet over med-heat/flame.
  • Step #9 Add the garlic, thyme & crushed red pepper.
  • Step #10 Cook, stirring constantly until fragrant, about 30 seconds.
  • Step #11 Stir in the tomatoes & tomato paste & cook this until slightly thickened.
  • Step #12 Return shrimp & lobster to the skillet & cook stirring frequently tunil heated through.
  • Step #13 Serve at once over linguine.
