Ingredients
1/4 c all-purpose flour (optional)
1 egg, beaten (optional)
2 c vegetable oil for frying (optional)
1 chorizo sausage link
12 pitted dates
1 tsp water (optional)
3 slices bacon, cut into fourths
Directions
Step #1 Cut the ends off of the chorizo, & cut into 12 cubes.
Step #2 Stuff each piece inside one of the dates.
Step #3 Wrap a piece of bacon around each date, & secure with toothpicks.
Step #4 This part may all be done ahead of time.
Step #5 Heat a skillet over medium-high heat.
Step #6 Place the dates in the pan with the bacon seam side down.
Step #7 Fry until golden, then turn & fry on the other side until bacon is cooked through.
Step #8 You may serve them now, or proceed to coat & fry them.
Step #9 Heat the oil in a deep-fryer or large skillet to 375 degrees F 190 degrees C.
Step #10 Whisk together the egg & water in a small bowl.
Step #11 Coat the dates with flour, then dip into the egg.
Step #12 Place as soon as possible into the hot oil, & fry until golden, turning once.
Step #13 This will take about 4 mins total.
Step #14 Drain & serve right away.
Step #15 .
