Fastest Fudge Cake Or Cupcakes Recipe

Ingredients
  • 3/4 c sugar .
  • 1 1/4 c brown sugar (packed) .
  • 2 eggs .
  • 8 tbsps unsalted butter, melted (1 stick) .
  • 1/8 tsp salt (or less, just a pinch) .
  • 5 tbsps unsalted butter .
  • 1 c all-purpose flour .
  • 6 tbsps unsweetened cocoa powder .
  • 1/2 tsp baking soda .
  • 1 tsp vanilla extract .
  • FAST FUDGE FROSTING INGREDIENTS .
  • 1/2 c hot water .
  • 1 tsp vanilla extract .
  • 1/4 tsp salt .
  • 3/4 c heavy cream (or 1/2 c evaporated skim milk) .
  • 2/3 c unsweetened cocoa powder

Directions
  • Step #1 Grease a 8-inch square or 9-inch round pan or put 12 ccake papers in a ccake pan & one extra in a custard c.
  • Step #2 Preheat the oven to 350 degrees F.
  • Step #3 To make the cake, cocoa, whisk the flour, baking soda & salt together.
  • Step #4 Sift only if the cocoa remains lumpy, set aside.
  • Step #5 (I sifted it through a fine strainer as I mixd it with the wet ingredients in step 5).
  • Step #6 In a large bowl, mix the warm melted butter & brown sugar.
  • Step #7 Add the eggs & vanilla & stir until well mixed.
  • Step #8 Add all of the flour mixture at once.
  • Step #9 Using a rubber spatula or wooden spoon - stir only until all the flour is moistened.
  • Step #10 Pour the hot water over the batter all at once.
  • Step #11 Stir only until the water is incorporated & the batter is smooth.
  • Step #12 Scrape the batter into the pan (or ccakes - to do that efficiently I scrape the batter into a 4 c measuring c & then easily pour it into the ccake liners.
  • Step #13 Bake until a toothpick inserted in the center of the cake comes out clean.
  • Step #14 Cake - 25 to 30 mins, ccakes 17 - 22 mins.
  • Step #15 Cool the cake in the pan on a rack for about 10 mins before unmolding.
  • Step #16 To unmold, slide a slim knife around the edges of the cake to release it from the pan.
  • Step #17 Invert the cake.
  • Step #18 Turn the cake right side up & cool completely on a rack before frosting the top & sides.
  • Step #19 Or cool the cake in the pan & frost only the top.
  • Step #20 Cupcakes can cool in the pan & remove & frost when cool.
  • Step #21 While the cake cooks, make the FAST FUDGE FROSTING:.
  • Step #22 In a medium saucepan, melt the butter.
  • Step #23 Stir in the sugar, cocoa, & salt.
  • Step #24 Gradually stir in the the cream.
  • Step #25 Heat, stirring constantly, until the mixture is smooth & hot but not boiling.
  • Step #26 Remove from the heat & stir in the the vanilla.
  • Step #27 Cool until thickened to the consistency of frosting(takes a while at room temp - try putting in fridge to speed up, but watch it!) or use as a warm glaze or sauce.
  • Step #28 Store leftover frosting in the refrigerator.
  • Step #29 Rewarm carefully in the microwave before using.
