Aash-e Shalgham Recipe

Ingredients
  • 100 g fresh mint .
  • 50 g split peas .
  • 2 large onions .
  • cooking oil .
  • 500 g turnips .
  • 200 g ground lamb or ground beef .
  • 1/2 tsp turmeric .
  • 100 g long grain rice or basmati rice .
  • salt .
  • black pepper

Directions
  • Step #1 Mix ground meat with grated onions, salt & black pepper.
  • Step #2 Shape into small balls, & fry in oil until colour changes.
  • Step #3 Add 4-5 glasses of hot water & split peas & cook over med-heat/flame for about 10 mins.
  • Step #4 Wash turnip & rice.
  • Step #5 Peel turnip & cut into a few pieces.
  • Step #6 Add both to aash.
  • Step #7 Also add turmeric, salt & black pepper.
  • Step #8 Mix well & cook over low heat/flame for about 15-20 mins, stirring every once in awhile.
  • Step #9 If using fresh mint, wash & chop finely.
  • Step #10 Fry mint in oil over med-heat/flame for 2-3 mins & pour over aash when serving.
