Joanne's Low Fat Beef And Bean Bake Recipe

Ingredients
  • 1/4 tsp salt .
  • 220 g peas .
  • 2 tsps cumin .
  • 8 oz lean ground beef .
  • 2 (400 g) canned kidney beans .
  • 2 tsps coriander leaves .
  • 1/4 tsp pepper .
  • 2 (415 g) canned tomatoes .
  • 2 tsps cayenne pepper .
  • 1 green chilies .
  • 4 oz low-fat Mexican cheese .
  • 3 tortillas .
  • 2 tbsps tomato paste .
  • 1/2 onion

Directions
  • Step #1 HEAT oven 180 degrees.
  • Step #2 BROWN meat in pan until brown; RINSE & DRAIN; return to pan.
  • Step #3 ADD green chilli sliced, sliced onion; COOK until soft.
  • Step #4 ADD kidney beans, canned tomatoes & tomato paste; SIMMERuncovered 15 mins.
  • Step #5 Spray 2 Quart Casserole dish with no fat cooking spray.
  • Step #6 PLACE one tortilla, 1/2 the mixture.
  • Step #7 ADD another tortilla & rest of mixture.
  • Step #8 ADD third & top this with cheese.
  • Step #9 BAKE 15 - 20 mins until cheese has nice & brown.
  • Step #10 CUT into slices & serve this with rocket & feta.
  • Step #11 ENJOY! NOTE: I used green chilli sliced & included the seeds; can use red or green & deseed; personal preference.
  • Step #12 NOTE: Taste sauce & add spices according to personal taste (I like it HOT :) ).
  • Step #13 NOTE: Drain canned peas & kidney beans; I like to add veggies when I get :).
